Ingredients

1 cup apple cider

1/2 cup granulated sugar

1/4 cup packed brown sugar

1/4 cup unsalted butter, melted

1 large egg

1 teaspoon vanilla extract

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon salt

1/4 teaspoon ground allspice

1/3 cup granulated sugar (for coating)

1 teaspoon ground cinnamon (for coating)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Lightly grease or spray a donut pan with non-stick cooking spray.

Reduce the Cider: In a small saucepan, bring the apple cider to a boil over medium heat. Reduce heat and simmer until it is reduced to 1/2 cup, about 10-15 minutes. Set aside to cool slightly.

Mix Wet Ingredients: In a large mixing bowl, whisk together the granulated sugar, brown sugar, melted butter, egg, and vanilla extract until well combined. Stir in the reduced apple cider.

Combine Dry Ingredients: In another bowl, whisk together the all-purpose flour, baking powder, ground cinnamon, ground nutmeg, salt, and ground allspice.

Combine Mixtures: Gradually add the dry mixture to the wet ingredients, stirring until just combined. Do not overmix; a few lumps are okay.

Fill the Donut Pan: Using a piping bag or a zippered plastic bag with a corner snipped off, fill each donut cavity about 2/3 full with the batter.

Bake the Donuts: Bake in the preheated oven for 10-12 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Coat: Let the donuts cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely. While they cool, mix the granulated sugar and ground cinnamon together in a shallow bowl.

Dust with Cinnamon Sugar: Once the donuts are cool, toss them in the cinnamon sugar mixture to coat evenly. Enjoy them warm or at room temperature!
