Ingredients
  

1 cup apple cider

1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

½ tsp ground cinnamon

¼ tsp ground nutmeg

¼ tsp salt

½ cup granulated sugar

2 large eggs

¼ cup unsalted butter, melted

¼ cup milk

1 tsp vanilla extract

Additional cinnamon sugar (1/4 cup sugar mixed with 1 tsp cinnamon) for coating

Instructions
 

Preheat your oven to 350°F (175°C). Grease a donut pan thoroughly with non-stick spray or butter.

    In a small saucepan, boil the apple cider over medium-high heat until it reduces to about ½ cup (this intensifies the flavor). Allow it to cool slightly.

      In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

        In another bowl, beat the sugar and eggs together until light and fluffy. Then mix in the melted butter, milk, vanilla extract, and the reduced apple cider.

          Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Do not overmix; a few lumps are okay.

            Spoon or pipe the batter into the prepared donut pan, filling each cavity about halfway.

              Bake for 12-15 minutes, or until the donuts are lightly golden and a toothpick inserted in the center comes out clean.

                Allow the donuts to cool in the pan for about 5 minutes before transferring them to a wire rack.

                  While the donuts are still warm, roll them in the cinnamon sugar mixture to coat evenly.
