Ingredients

1 lb fresh salmon fillet, skin removed

1/4 cup hot honey (store-bought or homemade)

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon lemon juice

Fresh parsley or cilantro, for garnish

Lemon wedges, for serving

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Prepare the Salmon: Pat the salmon fillet dry with paper towels, then cut it into bite-sized cubes, approximately 1-inch pieces.

Make the Marinade: In a small bowl, mix together the hot honey, olive oil, smoked paprika, garlic powder, salt, black pepper, and lemon juice until well combined.

Marinate the Salmon: Place the salmon cubes in a medium bowl and pour the hot honey mixture over them. Gently toss to coat all the pieces evenly. Let them marinate for 15-20 minutes at room temperature.

Bake the Salmon Bites: Spread the marinated salmon bites onto the prepared baking sheet in a single layer. Bake for 12-15 minutes, or until salmon is cooked through and flakes easily with a fork.

Garnish and Serve: Remove from oven and let it cool for a couple of minutes. Garnish with freshly chopped parsley or cilantro and serve with lemon wedges on the side for an extra zesty kick.
