Ingredients
  

For the Honey Lime Chicken:

2 large chicken breasts

1/4 cup honey

Juice of 2 limes

2 cloves garlic, minced

1 teaspoon ground cumin

Salt and pepper to taste

1 tablespoon olive oil

For the Avocado Rice:

1 cup long-grain white rice

2 cups low-sodium chicken broth

1 ripe avocado, diced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt to taste

For Garnish:

Radish slices

Extra lime wedges

Fresh cilantro leaves

Instructions
 

Marinate the Chicken:

    - In a bowl, combine honey, lime juice, minced garlic, cumin, salt, and pepper.

      - Add the chicken breasts and coat them in the marinade. Cover and refrigerate for at least 30 minutes (or up to 2 hours for best flavor).

        Prepare the Rice:

          - Rinse the rice under cold water until the water runs clear.

            - In a saucepan, bring chicken broth to a boil, then add the rice. Reduce heat to low, cover, and simmer for about 15-18 minutes or until rice is tender and liquid is absorbed.

              - Off the heat, let the rice sit covered for 5 minutes. Then fluff with a fork and mix in the diced avocado, cilantro, lime juice, and salt to taste. Set aside.

                Cook the Chicken:

                  - Heat olive oil in a grill pan or skillet over medium-high heat.

                    - Remove the chicken from the marinade and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Optional: brush with leftover marinade while cooking for extra flavor.

                      Assemble the Stack:

                        - On a serving platter, layer the avocado rice, followed by sliced honey lime chicken on top.
