Ingredients

2 cups boneless, skinless chicken breast, cut into bite-sized pieces

1 cup BBQ sauce (your favorite brand)

1 cup crushed BBQ potato chips

1 cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

Cooking oil for frying

Instructions

Marinate Chicken: In a bowl, combine the chicken pieces and BBQ sauce. Mix well to ensure chicken is fully coated. Cover and marinate in the fridge for at least 30 minutes (or up to 2 hours for more flavor).

Prepare Breading Station: Set up a breading station with three shallow bowls. In the first bowl, add the flour mixed with garlic powder, onion powder, smoked paprika, salt, and black pepper. In the second bowl, whisk the eggs. In the third bowl, place the crushed BBQ potato chips.

Bread the Chicken: Remove the marinated chicken from the fridge. Dip each piece into the seasoned flour, shaking off any excess, then into the egg mixture, and finally coat it in the crushed BBQ chips, pressing gently to adhere. Place the breaded nuggets on a plate.

Heat Oil: In a large skillet, heat about ½ inch of cooking oil over medium-high heat until hot (around 350°F or 175°C).

Fry Nuggets: Carefully add the nuggets to the hot oil in batches, making sure not to overcrowd the pan. Fry them for about 3-5 minutes on each side until golden brown and cooked through. Drain on paper towels.

Serve: Serve the nuggets hot with extra BBQ sauce for dipping. Enjoy your crispy, flavorful homemade BBQ chip chicken nuggets!
