Ingredients

For the Honey BBQ Chicken:

4 boneless, skinless chicken breasts

1 cup honey

1/2 cup BBQ sauce (your choice)

2 tbsp soy sauce

2 cloves garlic, minced

1 tsp smoked paprika

1/2 tsp black pepper

1/2 tsp salt

1 tbsp olive oil (for cooking)

For the Creamy Garlic Parmesan Potatoes:

2 lbs baby Yukon gold potatoes, halved

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

4 cloves garlic, minced

2 tbsp unsalted butter

1 tsp dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Marinate the Chicken:

    - In a bowl, combine honey, BBQ sauce, soy sauce, minced garlic, smoked paprika, black pepper, and salt. Mix well.

      - Place the chicken breasts in a resealable bag or a shallow dish, and pour the marinade over the chicken. Ensure all pieces are well coated. Marinate for at least 30 minutes (or up to 2 hours for better flavor) in the fridge.

        Prepare the Potatoes:

          - While the chicken is marinating, preheat your oven to 400°F (200°C).

            - In a large pot, boil the halved potatoes in salted water for about 10 minutes until tender but still firm. Drain and set aside.

              - In the same pot, melt butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.

                - Stir in the cream and Parmesan cheese, then mix until smooth. Add in the cooked potatoes and dried thyme. Season with salt and pepper to taste. Gently toss to coat the potatoes well.

                  Cook the Chicken:

                    - Heat olive oil in a large skillet over medium-high heat. Remove chicken from the marinade (reserve the marinade for later) and cook for about 5-6 minutes per side or until the chicken is fully cooked and has a nice char.

                      - Pour the reserved marinade into the skillet during the last few minutes of cooking, allowing it to thicken slightly and coat the chicken.

                        Serve:

                          - On a serving platter, arrange the creamy garlic parmesan potatoes and lay the honey BBQ chicken on top. Drizzle any remaining sauce from the skillet over the chicken.

                            - Garnish with chopped fresh parsley for a pop of color.
