4 medium sweet potatoes

1 pound ground turkey

1 cup black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 bell pepper, diced (any color)

1 small onion, diced

2 cloves garlic, minced

1 teaspoon cumin

1 teaspoon paprika

1 teaspoon chili powder

Salt and pepper, to taste

2 tablespoons olive oil

1/2 cup shredded cheese (cheddar or pepper jack)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Preheat the Oven: Start by preheating your oven to 400°F (200°C).

    Prepare the Sweet Potatoes: Wash the sweet potatoes thoroughly, then prick them several times with a fork. Place them on a baking sheet and bake for about 45 minutes or until tender.

      Cook the Turkey Mix: In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, and sauté for about 5 minutes until they begin to soften. Add the minced garlic and cook for another minute until fragrant.

        Add the Ground Turkey: Push the vegetables to one side of the skillet, then add the ground turkey to the other side. Cook, breaking it up with a spatula, until browned and cooked through, about 7-10 minutes.

          Season the Mixture: Stir in the cumin, paprika, chili powder, salt, and pepper. Add the black beans and corn, then mix well to combine. Cook for an additional 5 minutes until everything is heated through.

            Stuff the Sweet Potatoes: Once the sweet potatoes are cooked, take them out of the oven and let them cool slightly. Cut a slit down the center of each sweet potato and gently push the sides to open them up. Scoop a generous portion of the ground turkey mixture into each sweet potato.

              Add Cheese and Bake Again: After stuffing, sprinkle the shredded cheese over the top of each stuffed sweet potato. Return to the oven for about 5-7 minutes, or until the cheese has melted and is bubbly.

                Garnish and Serve: Remove from the oven and garnish with fresh cilantro. Serve with lime wedges on the side for an extra zing.
