High Protein Chicken Pasta Salad

Ingredients
  

2 cups whole wheat penne pasta

1 lb grilled chicken breast, diced

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup bell peppers (any color), chopped

1/2 cup red onion, finely chopped

1/4 cup feta cheese, crumbled

1/4 cup Kalamata olives, pitted and sliced

1/4 cup Greek yogurt

2 tbsp olive oil

2 tbsp lemon juice

1 tsp dried oregano

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the whole wheat penne pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool the pasta down.

    Prepare the Dressing: In a small bowl, whisk together the Greek yogurt, olive oil, lemon juice, dried oregano, salt, and pepper until well combined. Adjust seasoning according to taste.

      Combine Ingredients: In a large mixing bowl, combine the cooled pasta, diced grilled chicken, cherry tomatoes, cucumber, bell peppers, red onion, feta cheese, and Kalamata olives.

        Add the Dressing: Pour the dressing over the pasta salad mixture and gently toss until everything is well coated.

          Chill and Serve: Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes to let the flavors meld together. Serve chilled, garnished with fresh basil leaves.
