Hearty Veggie Rolls with Peanut Sauce

For the Veggie Rolls:

8 large rice paper wrappers

1 cup cabbage, finely shredded

1 carrot, julienned

1 bell pepper, thinly sliced (any color)

1 cucumber, julienned

1 avocado, sliced

1 cup fresh cilantro leaves

1 cup bean sprouts

1 tablespoon sesame seeds (for garnish)

For the Peanut Sauce:

1/3 cup creamy peanut butter

2 tablespoons soy sauce

2 tablespoons honey or maple syrup

1 tablespoon rice vinegar

1 tablespoon lime juice

1 clove garlic, minced

1 teaspoon grated fresh ginger

Water (to thin the sauce)

Instructions
 

Prepare the Peanut Sauce:

    - In a mixing bowl, combine the creamy peanut butter, soy sauce, honey (or maple syrup), rice vinegar, lime juice, minced garlic, and grated ginger.

      - Whisk the ingredients until smooth. If the sauce is too thick, gradually add water until the desired consistency is reached. Set aside.

        Prepare the Veggie Rolls:

          - Fill a large bowl with warm water. One at a time, soak each rice paper wrapper in the water for about 10-15 seconds until soft and pliable. Remove the wrapper and lay it flat on a clean, damp cutting board.

            - In the center of the wrapper, layer a small handful of shredded cabbage, a few slices of carrot, bell pepper, cucumber, avocado, a handful of cilantro leaves, and some bean sprouts. Be careful not to overfill.

              Roll the Veggies:

                - Fold the sides of the rice paper over the filling, then roll up tightly from the bottom to the top to enclose the filling completely. Repeat with the remaining wrappers and filling ingredients.

                  Serve:

                    - Arrange the rolled veggie rolls on a platter, garnish with sesame seeds, and serve with the peanut sauce on the side for dipping.
