2 cups rolled oats

1 cup mixed nuts (almonds, walnuts, pecans), chopped

1/2 cup pumpkin seeds

1/2 cup sunflower seeds

1/2 cup unsweetened coconut flakes

1/4 cup honey or maple syrup

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

1 teaspoon cinnamon

1/2 teaspoon sea salt

1/2 cup dried fruit (raisins, cranberries, or apricots), optional

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Mix Dry Ingredients: In a large mixing bowl, combine rolled oats, chopped mixed nuts, pumpkin seeds, sunflower seeds, coconut flakes, cinnamon, and sea salt. Stir until well mixed.

      Combine Wet Ingredients: In a separate bowl, whisk together honey (or maple syrup), melted coconut oil, and vanilla extract until well blended.

        Combine Mixtures: Pour the wet mixture over the dry ingredients and mix thoroughly, ensuring all the dry ingredients are evenly coated.

          Spread on Baking Sheet: Line a baking sheet with parchment paper. Spread the granola mixture evenly across the sheet.

            Bake: Bake in the preheated oven for 20-25 minutes, stirring every 10 minutes to ensure even browning. The granola should be golden brown and fragrant.

              Cool and Add Dried Fruit: Remove from the oven and let it cool completely. Once cooled, mix in any dried fruit if desired.
