Ground Turkey Teriyaki Stir Fry

1 pound ground turkey

2 tablespoons vegetable oil

1 cup broccoli florets

1 red bell pepper, sliced

1 cup snap peas

2 carrots, julienned

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1/4 cup soy sauce (low sodium)

2 tablespoons honey or maple syrup

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 teaspoon cornstarch mixed with 2 tablespoons water (for thickening)

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Cooked rice or quinoa (for serving)

Instructions
 

Prepare the Sauce: In a small bowl, whisk together the soy sauce, honey (or maple syrup), rice vinegar, and sesame oil. Set aside.

    Sauté Vegetables: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and grated ginger, and sauté for about 30 seconds until fragrant.

      Add Ground Turkey: Increase the heat to high and add the ground turkey to the skillet. Cook for about 5-7 minutes, breaking it apart with a spatula, until browned and cooked through.

        Stir in Vegetables: Add the broccoli, red bell pepper, snap peas, and carrots to the skillet. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.

          Combine with Sauce: Pour the prepared teriyaki sauce over the turkey and vegetables. Stir well to coat everything evenly.

            Thicken the Sauce: Bring the mixture to a gentle simmer. Stir in the cornstarch slurry (cornstarch mixed with water) to thicken the sauce. Cook for an additional 1-2 minutes until the sauce is glossy and coats the stir-fry nicely.

              Serve: Remove from heat and sprinkle with sliced green onions and sesame seeds. Serve immediately over cooked rice or quinoa.
