Ground Turkey Sweet Potato Skillet

Ingredients
  

1 lb ground turkey

2 medium sweet potatoes, diced into small cubes

1 medium onion, chopped

2 cloves garlic, minced

1 bell pepper (any color), diced

1 cup fresh spinach, chopped

1 tsp paprika

1/2 tsp cumin

1/2 tsp chili powder

Salt and pepper to taste

2 tbsp olive oil

1/4 cup chicken broth (or vegetable broth)

Fresh parsley for garnish (optional)

Instructions
 

Prepare the sweet potatoes: In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the diced sweet potatoes, season with salt and pepper, and sauté for about 10-12 minutes until they start to soften and brown, stirring occasionally. Remove them from the skillet and set aside.

    Cook the turkey: In the same skillet, add the remaining tablespoon of olive oil. Once heated, add the chopped onion and bell pepper. Sauté for about 3-4 minutes until the onion becomes translucent.

      Add garlic and spices: Stir in the minced garlic, paprika, cumin, and chili powder. Cook for another 1-2 minutes until fragrant.

        Combine turkey: Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until the turkey is fully browned and cooked through, about 6-8 minutes. Drain any excess fat if necessary.

          Mix in sweet potatoes: Return the sautéed sweet potatoes to the skillet and pour in the chicken broth. Stir everything together and let it simmer for an additional 5 minutes, allowing the flavors to meld.

            Finish with spinach: Stir in the chopped spinach and cook for 2-3 minutes until wilted. Adjust seasoning with additional salt and pepper to taste.
