1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 red bell pepper, diced

1 small onion, diced

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon cumin

½ teaspoon chili powder

Salt and pepper, to taste

2 tablespoons olive oil

1 cup spinach (fresh or baby)

¼ cup chicken broth (or vegetable broth)

Optional: Fresh cilantro or parsley for garnish

Instructions
 

Heat the olive oil in a large skillet over medium heat. Add the diced onions and garlic, sautéing for about 2-3 minutes until they are fragrant and translucent.

    Add the ground turkey to the skillet, cooking until it's browned and no longer pink, breaking it up into small pieces with a spatula, approximately 5-7 minutes.

      Stir in the diced sweet potatoes, red bell pepper, smoked paprika, cumin, chili powder, salt, and pepper. Cook for an additional 5 minutes, stirring occasionally to ensure even cooking.

        Pour in the chicken broth, cover the skillet, and let it simmer for about 12-15 minutes, or until the sweet potatoes are tender and cooked through. Stir occasionally to prevent sticking.

          Once the sweet potatoes are tender, add the spinach to the skillet, and stir until wilted. Cook for another 2-3 minutes.

            Taste and adjust seasoning if necessary. Garnish with fresh cilantro or parsley if desired.
