Ground Turkey Sweet Potato Casserole

1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 cup green bell pepper, chopped

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) black beans, rinsed and drained

1 tsp smoked paprika

1 tsp cumin

1/2 tsp chili powder

1/2 tsp salt

1/4 tsp black pepper

1 cup chicken broth

1 cup shredded cheddar cheese (optional)

Fresh cilantro, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Turkey: In a large skillet over medium heat, add the ground turkey. Cook for 5-7 minutes, breaking it apart with a spoon, until it’s no longer pink.

      Add Vegetables: Stir in the onions, garlic, and green bell pepper. Sauté for another 4-5 minutes until the vegetables are tender.

        Season: Add the smoked paprika, cumin, chili powder, salt, and black pepper. Stir well to combine and cook for an additional minute to toast the spices.

          Combine Ingredients: Add the diced sweet potatoes and black beans to the skillet. Pour in the chicken broth, stirring everything together. Bring the mixture to a simmer.

            Transfer to Baking Dish: Pour the mixture into a greased 2-quart casserole dish, spreading it evenly.

              Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the sweet potatoes are tender.

                Add Cheese (Optional): If desired, uncover the casserole and sprinkle shredded cheddar cheese on top. Return the dish to the oven and bake for an additional 5-10 minutes until the cheese is melted and bubbly.

                  Serve: Remove from the oven, let cool for a few minutes, garnish with fresh cilantro if using, and serve warm.
