1 lb ground turkey

2 bell peppers (red and yellow), chopped

1 medium onion, diced

2 cloves garlic, minced

1 cup corn (fresh or frozen)

1 can (14.5 oz) diced tomatoes with green chilies

1 tsp cumin

1 tsp paprika

1/2 tsp chili powder

Salt and pepper to taste

2 tbsp olive oil

Fresh cilantro for garnish

Optional: shredded cheese for topping

Heat the Oil: In a large skillet, heat the olive oil over medium heat. Once hot, add the diced onions and cook for 2-3 minutes until they become translucent.

    Add Garlic and Peppers: Stir in the minced garlic and chopped bell peppers. Sauté for another 3-4 minutes until the peppers start to soften.

      Brown the Turkey: Add the ground turkey to the skillet. Break it up with a spatula and cook for about 6-8 minutes, or until it is browned and cooked through.

        Season: Sprinkle in the cumin, paprika, chili powder, salt, and pepper. Mix well to ensure the meat and veggies are evenly coated with the spices.

          Incorporate Tomatoes and Corn: Pour in the diced tomatoes (with their juices) and corn. Stir everything together and let it simmer for another 5-7 minutes, allowing the flavors to meld.
