Ingredients
  

2 ribeye steaks (about 1 inch thick)

Salt and pepper, to taste

1 tablespoon olive oil

2 ripe avocados

1 tablespoon lime juice

4 slices of sourdough bread

4 slices of aged cheddar cheese

1 cup arugula or spinach

1 small red onion, thinly sliced

Optional: hot sauce or chimichurri for drizzling

Prepare the Steak: Season the ribeye steaks generously with salt and pepper. Heat a grill pan or outdoor grill over medium-high heat. Add the olive oil and let it heat.

    Grill the Steak: Place the steaks on the grill and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from the grill and let them rest for about 5 minutes before slicing.

      Prepare the Avocado Spread: While the steak is resting, cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Add the lime juice, salt, and pepper to taste. Mash the avocado to your desired smoothness.

        Toast the Bread: While the steak is resting, toast the slices of sourdough bread on the grill or in a toaster until they are nice and golden brown.

          Assemble the Sandwich: On one slice of toasted bread, spread a generous amount of the mashed avocado.
