200g fresh shrimp, peeled and deveined

200g scallops, cleaned

200g mussels, scrubbed and de-bearded

100g squid, cleaned and sliced into rings

1 cup heavy cream

1 cup white wine (like Sauvignon Blanc)

2 tablespoons olive oil

2 shallots, finely chopped

2 cloves garlic, minced

1 tablespoon fresh lemon juice

1 teaspoon paprika

1 teaspoon dried thyme

1 tablespoon fresh parsley, chopped

Salt and pepper, to taste

1 cup grated Gruyère cheese

1/2 cup breadcrumbs (preferably homemade)

Lemon wedges, for serving

Instructions
 

Preheat the Oven: Preheat your oven to 180°C (350°F).

    Sauté the Aromatics: In a large pan over medium heat, add olive oil. Once hot, add the chopped shallots and minced garlic. Sauté until they are translucent, about 2-3 minutes.

      Cook the Seafood: Increase the heat to medium-high and add the shrimp, scallops, and squid to the pan. Cook for about 3-4 minutes until they start to turn opaque. Add the mussels, cover, and let them steam for 2-3 minutes until they open up. Discard any that remain closed.

        Make the Sauce: Once the seafood is cooked, stir in the white wine, heavy cream, lemon juice, paprika, thyme, salt, and pepper. Allow the mixture to simmer for another 5 minutes until slightly thickened.

          Assemble the Cassolette: Spoon the seafood mixture into individual cassolette dishes or one large baking dish. Sprinkle the Gruyère cheese evenly over the top. Then, add breadcrumbs over the cheese for a crunchy topping.

            Bake: Place the cassolette(s) in the preheated oven and bake for 15-20 minutes, or until the cheese is bubbly and golden brown.

              Garnish and Serve: Remove from the oven, sprinkle fresh parsley over the top, and serve immediately with lemon wedges on the side.
