500g chicken breast, cut into bite-sized pieces

200g plain yogurt

2 tablespoons lemon juice

2 teaspoons garam masala

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon turmeric powder

1 teaspoon cayenne pepper (adjust to taste)

Salt to taste

For the Curry Sauce:

2 tablespoons vegetable oil or ghee

1 large onion, finely chopped

4 cloves garlic, minced

1-inch piece of ginger, grated

2 teaspoons ground cumin

1 teaspoon ground coriander

1 teaspoon garam masala

2 teaspoons turmeric powder

1 can (400g) crushed tomatoes

100ml heavy cream

Fresh cilantro (coriander) for garnish

Salt and pepper to taste

Instructions
 

Marinate the Chicken:

    - In a large bowl, combine the chicken pieces with yogurt, lemon juice, garam masala, cumin, coriander, turmeric, cayenne pepper, and salt. Mix well until the chicken is coated.

      - Cover and refrigerate for at least 1 hour, preferably overnight for deeper flavors.

        Cook the Chicken:

          - Preheat your oven to 200°C (400°F). Spread the marinated chicken on a baking tray and roast for about 15-20 minutes, until slightly charred and cooked through. Alternatively, grill the chicken over medium heat until nicely browned.

            Prepare the Curry Sauce:

              - In a large skillet, heat the vegetable oil or ghee over medium heat. Add the chopped onion and sauté until golden brown, about 8-10 minutes.
