8 oz (225g) spaghetti or linguine

4 tablespoons unsalted butter

5 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 cup heavy cream

1 cup grated Parmesan cheese

Salt and black pepper, to taste

1 cup fresh spinach, chopped

¼ cup fresh parsley, chopped

Zest of 1 lemon

Additional Parmesan cheese for serving

Cook the Pasta: In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Reserve ½ cup of the pasta water, then drain and set aside.

    Sauté Garlic: In a large skillet, melt the butter over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1-2 minutes until fragrant, being careful not to burn the garlic.

      Add Cream: Pour in the heavy cream and bring it to a gentle simmer. Allow it to cook for about 3-4 minutes, stirring occasionally until slightly thickened.

        Incorporate Cheese: Stir in the grated Parmesan cheese and mix until melted and smooth. If the sauce is too thick, gradually add some reserved pasta water until you reach your desired consistency.

          Season and Mix: Add salt and black pepper to taste, then fold in the chopped spinach. Cook for another 1-2 minutes until the spinach is wilted.

            Combine Pasta: Add the drained pasta to the skillet with the garlic Parmesan sauce. Toss well to coat the pasta evenly. Add lemon zest for a burst of freshness.
