Garlic Parmesan Chicken Skewers

Ingredients
  

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon salt

½ teaspoon black pepper

½ cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped (for garnish)

Wooden or metal skewers (if using wooden skewers, soak in water for 30 minutes)

Instructions
 

Marinate the Chicken: In a large mixing bowl, combine olive oil, minced garlic, oregano, thyme, salt, and black pepper. Add the cubed chicken pieces and toss well to coat. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

    Preheat the Grill: If using a grill, preheat it to medium-high heat (about 375°F to 400°F). If using the oven, preheat to 400°F.

      Assemble the Skewers: Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking.

        Add Parmesan: Once all the chicken is skewered, sprinkle grated Parmesan cheese generously over each skewer.

          Grill or Bake: Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. If baking, place skewers on a baking sheet lined with parchment paper and bake for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F.
