Ingredients

300g fresh mushrooms (like cremini or button), sliced

4 cloves garlic, minced

2 tablespoons olive oil

1 tablespoon unsalted butter

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt, to taste

Black pepper, to taste

4 slices of rustic bread (such as sourdough or ciabatta)

1/4 cup grated Parmesan cheese (optional)

Fresh parsley, chopped, for garnish

Lemon zest, for garnish

Instructions

Sauté the Mushrooms: In a large skillet, heat the olive oil and butter over medium heat. Once the butter is melted, add in the sliced mushrooms. Sauté for about 5-7 minutes until they are browned and have released their moisture.

Add Garlic and Spices: Stir in the minced garlic and fresh thyme. Sauté for another 2-3 minutes until the garlic is fragrant, being careful not to burn it. Season with salt and black pepper to taste.

Toast the Bread: While the mushrooms are cooking, preheat a grill pan or regular skillet over medium-high heat. Toast the slices of bread until golden brown on both sides, about 3-4 minutes per side. If you like, you can brush the bread lightly with olive oil first for extra flavor.

Assemble the Toasts: Once the bread is toasted, transfer each slice to a serving plate. Spoon the sautéed garlic mushrooms generously over each slice. If using, sprinkle the toasted bread with grated Parmesan cheese.

Garnish and Serve: Finish with a sprinkle of chopped fresh parsley and a bit of lemon zest for a vibrant touch. Serve immediately while the toast is warm and the mushrooms are still sizzling.
