1 lb sirloin steak, cut into 1-inch cubes

1 lb baby Yukon gold potatoes, halved

4 tbsp unsalted butter

5 cloves garlic, minced

1 tsp dried thyme (or 1 tbsp fresh thyme)

1 tsp paprika

Salt and pepper, to taste

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Prep the Potatoes: In a large pot, bring salted water to a boil. Add the halved baby potatoes and cook for about 10-12 minutes or until fork-tender. Drain and set aside.

    Sear the Steak: Season the steak cubes with salt, pepper, and paprika. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the steak bites to the skillet in a single layer, taking care not to overcrowd. Cook for 2-3 minutes on each side until browned and cooked to your desired doneness. Remove the steak from the skillet and set aside.

      Make the Garlic Butter: In the same skillet, reduce heat to medium and add the remaining olive oil and butter. Once the butter has melted, add the minced garlic and thyme, sautéing for about 1-2 minutes until fragrant.

        Combine: Add the drained potatoes to the skillet with the garlic butter, tossing them to ensure they are coated evenly. Cook for an additional 4-5 minutes, allowing them to crisp up slightly.
