Garlic Butter Steak Bites and Potatoes

1 lb sirloin steak, cut into 1-inch cubes

1 lb baby potatoes, halved

4 tablespoons unsalted butter, divided

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

Salt and pepper, to taste

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Prepare the Potatoes: In a large pot, add the halved baby potatoes and cover them with water. Bring to a boil and cook for about 10-12 minutes until tender but not falling apart. Drain and set aside.

    Sear the Steak Bites: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Season the steak bites with salt and pepper. Once the skillet is hot, add the steak in a single layer and sear for about 2-3 minutes on each side until they develop a nice crust and are cooked to your desired doneness (medium-rare is recommended). Remove the steak from the skillet and let it rest.

      Cook the Potatoes: In the same skillet, add 2 tablespoons of butter. Once melted, add the cooked potatoes and sauté for about 5-7 minutes until they start to crisp up. Season with salt, pepper, rosemary, and thyme.

        Make the Garlic Butter Sauce: In the skillet, push the potatoes to the side and add the remaining 1 tablespoon of butter. Add the minced garlic and sauté for about 1 minute until fragrant. Be careful not to burn the garlic!

          Combine Everything: Return the steak bites to the skillet, mixing them with the sautéed potatoes. Toss everything gently in the garlic butter until well coated and heated through.
