1 pound sirloin steak, cubed into bite-sized pieces

1 pound baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon paprika

Salt and pepper to taste

Olive oil for drizzling

Chopped fresh parsley for garnish (optional)

Prepare the Potatoes:

    Preheat your oven to 425°F (220°C). In a large bowl, toss the halved baby potatoes with olive oil, salt, pepper, and paprika until evenly coated. Spread them out on a baking sheet in a single layer.

      Roast the Potatoes:
