Garlic Butter Steak and Potatoes Skillet

1 lb sirloin steak, cut into bite-sized pieces

1 lb baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon rosemary, chopped

1 teaspoon thyme, chopped

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Prepare the Potatoes: In a medium pot, bring water to a boil. Add the halved baby potatoes and a pinch of salt. Cook for about 15-20 minutes until tender. Drain and set aside.

    Cook the Steak: In a large skillet, heat the olive oil over medium-high heat. Season the steak pieces generously with salt, pepper, and paprika. Add the steak to the skillet and sear for about 4-5 minutes until browned on all sides. Remove the steak from the skillet and set aside.

      Sauté the Potatoes: In the same skillet, add 2 tablespoons of butter. Once melted, add the cooked potatoes and sauté for about 5-7 minutes or until they start to get crispy and golden brown. Stir occasionally to ensure even cooking.

        Combine Ingredients: Reduce the heat to medium. Add the minced garlic, rosemary, and thyme to the skillet with the potatoes. Sauté for an additional 1-2 minutes until fragrant.

          Add Steak and Butter: Return the cooked steak to the skillet and add the remaining 2 tablespoons of butter. Toss everything together and cook for an additional 2-3 minutes, allowing the butter to melt and coat the steak and potatoes.
