4 slices of thick sourdough bread

4 tablespoons unsalted butter, softened

2 cloves garlic, minced

1 teaspoon dried parsley (or 1 tablespoon fresh parsley, chopped)

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

Salt and pepper to taste

Optional: a pinch of red pepper flakes for heat

Prepare the Garlic Butter: In a small bowl, combine the softened butter, minced garlic, dried parsley, and a pinch of salt and pepper. Mix well until fully blended.

    Assemble the Sandwiches:

      - Spread a generous amount of the garlic butter on one side of each slice of sourdough bread.

        - On the unbuttered side of two slices, layer the cheddar and mozzarella cheeses evenly. If desired, sprinkle red pepper flakes for an extra kick.

          - Top with the remaining slices of bread, buttered side facing out.

            Cook the Sandwiches:

              - Heat a skillet over medium heat. Once hot, place the sandwiches in the skillet.
