1 cup diced pineapple

1 cup Greek yogurt (plain or vanilla)

2 tablespoons honey or agave syrup

1 teaspoon lime juice

½ teaspoon cinnamon

Fresh mint leaves for garnish

Optional: shredded coconut for topping

Instructions

Prepare the Fruit: In a large bowl, combine diced strawberries, mango, kiwi, and pineapple. Gently toss to mix the fruits.

Make the Yogurt Sauce: In a small bowl, mix the Greek yogurt, honey (or agave syrup), lime juice, and cinnamon until smooth and well-blended.

Warm the Tortillas: Lightly heat the mini flour tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until they are warm and slightly toasted.

Assemble the Tacos: Place a generous spoonful of the mixed fruit onto each tortilla. Drizzle the yogurt sauce over the top.

Garnish: Sprinkle with shredded coconut if using and add a few fresh mint leaves for a popped color and extra flavor.
