Fried Bananas with Cinnamon Butter Sauce

2 large ripe bananas, peeled and sliced diagonally

1/2 cup all-purpose flour

1/4 cup corn starch

1/4 teaspoon salt

1/2 teaspoon baking powder

1/2 cup cold sparkling water

1/4 cup unsalted butter

1 teaspoon ground cinnamon

1/4 cup brown sugar

Pinch of nutmeg

Optional: vanilla ice cream for serving

Instructions
 

In a mixing bowl, whisk together the flour, corn starch, salt, and baking powder until well combined.

    Gradually pour in the cold sparkling water, whisking until the batter is smooth and slightly thick. Let it rest for about 10 minutes.

      In a skillet, melt the butter over low heat. Add the ground cinnamon, brown sugar, and a pinch of nutmeg. Stir until the sugar has melted and the mixture is smooth. Remove from heat and set aside.

        Heat vegetable oil in a deep skillet or frying pan until hot (around 350°F or 175°C).

          Dip each banana slice into the batter, allowing any excess to drip off, then carefully place them into the hot oil.

            Fry the bananas in batches for about 2-3 minutes on each side or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

              Serve the fried bananas warm, drizzled with the cinnamon butter sauce, and optionally, a scoop of vanilla ice cream.
