Ingredients

2 boneless, skinless chicken thighs

2 teaspoons gochujang (Korean chili paste)

1 tablespoon soy sauce

1 tablespoon sesame oil

4 cups chicken broth

2 packs instant ramen noodles (discard the seasoning packets)

1 tablespoon vegetable oil

3 cloves garlic, minced

1 inch piece ginger, grated

1 cup baby spinach

1 cup sliced shiitake mushrooms

1 green onion, sliced (for garnish)

2 teaspoons sesame seeds (for garnish)

Salt and pepper to taste

½ cup heavy cream

Instructions

Prepare the Chicken: In a bowl, mix together gochujang, soy sauce, sesame oil, salt, and pepper. Add the chicken thighs and coat well. Allow them to marinate for at least 15 minutes.

Cook the Chicken: Heat vegetable oil in a large skillet over medium-high heat. Add the marinated chicken and cook for about 5-6 minutes on each side or until thoroughly cooked and golden brown. Remove from heat and let rest before slicing.

Make the Broth: In a large pot, heat a little oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant. Pour in the chicken broth and bring to a gentle boil.

Add Noodles and Vegetables: Once the broth is boiling, add the ramen noodles and cook according to package instructions (usually 3-5 minutes). Add baby spinach and shiitake mushrooms in the last minute of cooking.

Prepare the Creamy Garlic Sauce: In a small saucepan, simmer heavy cream over low heat. Stir in remaining minced garlic and a pinch of salt; simmer for about 3-5 minutes until it thickens slightly.

Assemble the Ramen: To serve, ladle the ramen and broth into bowls. Top with sliced chicken, a drizzle of creamy garlic sauce, and garnish with sliced green onion and sesame seeds.

Enjoy! Serve hot and enjoy the spicy, creamy, and comforting flavors of Fiery Chicken Ramen.
