Fiery Chicken Ramen with Creamy Garlic Sauce

2 boneless, skinless chicken thighs, sliced

4 cups chicken broth

2 packs of ramen noodles (discard the seasoning packets)

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon chili paste (adjust to taste)

4 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 cup bok choy, chopped

1 carrot, julienned

2 green onions, sliced

1 tablespoon rice vinegar

1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

Salt and pepper to taste

2 tablespoons heavy cream

1 tablespoon butter

Optional: chili flakes for garnish

Instructions
 

In a large pot, heat sesame oil over medium-high heat. Add the sliced chicken thighs, season with salt and pepper, and sauté until browned and cooked through, about 5-7 minutes.

    Add minced garlic and grated ginger to the pot and sauté for an additional 1-2 minutes until fragrant.

      Pour in the chicken broth and bring the mixture to a boil. Add soy sauce, chili paste, and rice vinegar, stirring until well combined.

        Add the bok choy and julienned carrots to the broth, simmering for about 3-4 minutes until the veggies are tender.

          Add the ramen noodles to the pot and cook according to package instructions, typically about 4 minutes.

            In a small bowl, combine the cornstarch slurry with a tablespoon of the hot broth from the pot, whisking until smooth. Pour the slurry back into the pot and stir to thicken the broth slightly.

              In a separate small pan, melt butter over low heat and stir in heavy cream until fully incorporated. Drizzle this creamy garlic sauce into the ramen, stirring well to combine.

                Taste and adjust the seasoning, adding more chili paste or salt as desired.

                  Serve hot, garnished with sliced green onions and a sprinkle of chili flakes for added heat.
