English Muffin Breakfast Pizza

Made with warm, toasted English muffins, scrambled eggs, and a medley of breakfast favorites like sausage, bell peppers, and gooey mozzarella cheese, this recipe is a fun twist on your morning routine. Ready in just 25 minutes, it's perfect for busy mornings or weekend brunch. Top with fresh parsley and enjoy a slice of breakfast bliss!

Ingredients
  

2 whole English muffins, split in half

4 large eggs

1 cup shredded mozzarella cheese

½ cup cooked and crumbled breakfast sausage (or bacon)

½ cup diced bell peppers (red and green)

¼ cup diced red onion

¼ teaspoon garlic powder

¼ teaspoon black pepper

Salt to taste

Fresh parsley, chopped (for garnish)

Olive oil (for drizzling)

Instructions
 

Preheat your oven to 400°F (200°C).

    Place the split English muffin halves on a baking sheet, cut side up. Drizzle with a little olive oil for added flavor.

      In a skillet, over medium heat, scramble the eggs. Season with salt, pepper, and garlic powder. Cook until just set; they will finish cooking in the oven.

        Evenly distribute the scrambled eggs onto each muffin half.

          Top each muffin with a sprinkle of shredded mozzarella cheese.

            In a bowl, mix together the crumbled sausage (or bacon), diced bell peppers, and onions. Spoon this mixture over the cheese on each muffin.

              Sprinkle a little extra mozzarella cheese on top for that gooey finish.

                Bake in the preheated oven for about 10-12 minutes, or until the cheese is melted and bubbly, and the edges of the English muffins are golden brown.

                  Remove from the oven and let cool slightly. Garnish with fresh parsley before serving.
