Easy Tuscan Chicken Pasta (40-Minutes)

12 oz (340g) penne or farfalle pasta

2 tablespoons olive oil

1 pound (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

1 teaspoon Italian seasoning

Salt and black pepper, to taste

4 cloves garlic, minced

1 can (14 oz) diced tomatoes, undrained

1 cup spinach, fresh or frozen (thawed and drained)

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

1/4 teaspoon red pepper flakes (optional)

Fresh basil leaves, for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water and then drain the rest. Set aside.

    Sauté the Chicken: In a large skillet, heat olive oil over medium-high heat. Season the chicken pieces with Italian seasoning, salt, and pepper. Add to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Garlic and Tomatoes: In the same skillet, add minced garlic. Sauté for about 1 minute until fragrant. Then, add the diced tomatoes (with juices) and bring to a simmer. Let it cook for about 3-4 minutes.

        Combine Ingredients: Stir in the spinach and let it wilt. Add the heavy cream, Parmesan cheese, and red pepper flakes (if using) to the skillet, stirring to combine. Allow the sauce to simmer for another 2-3 minutes until slightly thickened.

          Mix Pasta and Chicken: Return the cooked chicken to the skillet, followed by the drained pasta. Toss everything together, adding reserved pasta water a bit at a time until you reach your desired sauce consistency. Adjust seasoning if necessary.
