Easy Spinach and Ricotta Stuffed Shells – A Healthy Veggie Dinner

20 large jumbo pasta shells

2 cups fresh spinach, chopped

15 oz ricotta cheese

1 cup shredded mozzarella cheese (plus extra for topping)

1/2 cup grated Parmesan cheese

1 large egg

1 tsp minced garlic

1 tsp dried Italian herbs (oregano, basil, thyme)

2 cups marinara sauce

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot, bring salted water to a boil. Cook the jumbo pasta shells according to package instructions until just al dente. Drain and set aside.

      Prepare the Filling: In a large mixing bowl, combine the ricotta cheese, chopped spinach, 1 cup of mozzarella cheese, Parmesan cheese, egg, minced garlic, Italian herbs, salt, and pepper. Mix well until all ingredients are fully blended.

        Stuff the Shells: Carefully fill each cooked jumbo shell with the spinach and ricotta mixture, using a spoon or a piping bag.

          Prepare the Baking Dish: Spread 1 cup of marinara sauce on the bottom of a 9x13 inch baking dish. Arrange the stuffed shells in a single layer on top of the sauce.

            Top with Sauce and Cheese: Pour the remaining marinara sauce over the stuffed shells, ensuring they are evenly coated. Sprinkle additional mozzarella cheese on top.

              Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and golden.

                Garnish and Serve: Once baked, let the dish cool slightly. Garnish with fresh basil leaves before serving.
