Ingredients

8 oz (225g) spaghetti or your choice of pasta

4 cups broccoli florets (fresh or frozen)

4 tablespoons unsalted butter

4 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

4 cups vegetable broth (or chicken broth)

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Zest of 1 lemon

Juice of 1/2 lemon

Fresh parsley, chopped (for garnish)

Instructions

Sauté Garlic: In a large pot or saucepan, melt the butter over medium heat. Add the minced garlic and red pepper flakes (if using) and sauté for about 1-2 minutes, until fragrant but not browned.

Add Pasta and Broth: Pour in the vegetable broth and bring it to a boil. Add the pasta and broccoli florets, stirring to combine.

Cook: Reduce the heat to a simmer, cover the pot, and cook for 10-12 minutes, stirring occasionally, until the pasta is al dente and the broccoli is tender. Make sure to check the doneness of the pasta to avoid overcooking.

Finish the Dish: Remove the pot from heat. Stir in the grated Parmesan cheese, lemon zest, and lemon juice. Season with salt and pepper to taste. If the pasta seems dry, add a splash of reserved broth or water.

Serve: Divide the pasta into bowls, garnish with freshly chopped parsley, and extra Parmesan if desired. Enjoy your dish warm!
