3 medium Russet potatoes, diced

1 red bell pepper, diced

1 green bell pepper, diced

1 small onion, diced

4 strips of bacon, chopped

4 large eggs

1 cup shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cook the bacon: In a large skillet over medium heat, cook the chopped bacon until crispy. Using a slotted spoon, transfer the bacon to a paper towel-lined plate, leaving the drippings in the skillet.
