Ingredients

For the Chicken Skewers:

1 lb (450g) boneless, skinless chicken thighs or breasts, cut into 1-inch pieces

3 tablespoons soy sauce

2 tablespoons fish sauce

2 tablespoons brown sugar

1 tablespoon lime juice (about 1 lime)

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 teaspoon ground turmeric

1 teaspoon red pepper flakes (adjust for spice preference)

Bamboo or metal skewers (if using bamboo, soak in water for 30 minutes)

For the Peanut Sauce:

1/2 cup creamy peanut butter

2 tablespoons soy sauce

1 tablespoon lime juice

1 tablespoon honey or maple syrup

1 teaspoon sesame oil

2-3 tablespoons coconut milk or water (to thin the sauce)

1 clove garlic, minced

1/2 teaspoon crushed red pepper flakes (optional)

Instructions

Marinate the Chicken:

    - In a bowl, whisk together soy sauce, fish sauce, brown sugar, lime juice, minced garlic, grated ginger, turmeric, and red pepper flakes.

      - Add the chicken pieces, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 30 minutes or up to 2 hours for deeper flavor.

        Prepare the Peanut Sauce:

          - In a mixing bowl, combine the peanut butter, soy sauce, lime juice, honey (or maple syrup), sesame oil, minced garlic, and crushed red pepper flakes (if using).

            - Gradually add coconut milk or water until the sauce reaches your desired consistency. Mix until smooth and set aside.

              Skewer the Chicken:

                - Preheat your grill to medium-high heat.

                  - Thread marinated chicken pieces onto skewers, leaving a little space between each piece for even cooking.

                    Grill the Chicken:

                      - Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and reaches an internal temperature of 165°F (75°C). Grill marks and a slight char enhance the flavor.

                        Serve:

                          - Remove skewers from the grill and let them rest for a couple of minutes.

                            - Serve hot with the peanut sauce drizzled on top or in a small bowl for dipping. Garnish with chopped fresh cilantro or crushed peanuts if desired.
