Ingredients

8 oz linguine pasta

2 tablespoons unsalted butter

1 tablespoon olive oil

1 pound boneless, skinless chicken thighs, cut into bite-sized pieces

Salt and pepper, to taste

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried oregano

½ teaspoon crushed red pepper flakes (adjust for spice preference)

1 cup cherry tomatoes, halved

½ cup sweet corn (canned or frozen, thawed)

1 tablespoon Worcestershire sauce

½ cup chicken broth

1 tablespoon freshly squeezed lemon juice

¼ cup fresh parsley, chopped (for garnish)

Grated Parmesan cheese, for serving

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the linguine according to package instructions until al dente. Drain and set aside, reserving ½ cup of the pasta water.

Prepare the Chicken: In a large skillet over medium-high heat, melt the butter and olive oil together. Season the chicken pieces with salt and pepper. Once the butter has melted and is bubbling, add the chicken to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.

Add Aromatics and Spices: Stir in the minced garlic, smoked paprika, dried oregano, and crushed red pepper flakes. Sauté for another 1-2 minutes until the garlic is fragrant.

Incorporate Veggies: Add the cherry tomatoes and sweet corn to the skillet, cooking until the tomatoes start to soften, about 2-3 minutes.

Add Sauces: Pour in the Worcestershire sauce and chicken broth, stirring to combine. Bring the mixture to a gentle simmer and let cook for about 3-5 minutes to allow the flavors to meld.

Combine Pasta and Sauce: Add the cooked linguine to the skillet, tossing well to coat the pasta in the sauce. If the mixture seems dry, add a bit of the reserved pasta water until you reach the desired consistency.

Finish with Lemon: Squeeze fresh lemon juice over the top and stir to mix well. Taste and adjust seasoning if necessary.

Serve: Spoon the Cowboy Butter Chicken Linguine into bowls, garnishing with chopped parsley and a generous sprinkle of grated Parmesan cheese. Serve immediately for a delightful meal!
