Easy Chipotle Ranch Grilled Chicken Burrito

2 boneless, skinless chicken breasts

1/2 cup chipotle ranch dressing

1 cup cooked rice (white or brown)

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 cup shredded cheddar cheese

1 cup chopped lettuce

1 medium tomato, diced

1/4 cup fresh cilantro, chopped

4 large flour tortillas

Lime wedges for serving

Salt and pepper to taste

Marinate the Chicken: In a medium bowl, place the chicken breasts and pour half of the chipotle ranch dressing over them. Allow them to marinate in the refrigerator for at least 30 minutes or up to overnight for more flavor.

    Grill the Chicken: Preheat a grill or grill pan over medium-high heat. Season the marinated chicken breasts with salt and pepper. Grill for 6-8 minutes per side or until the chicken is fully cooked and has nice grill marks. Remove from the grill and let it rest for 5 minutes before slicing into strips.

      Prepare the Burrito Filling: In a large bowl, combine the cooked rice, black beans, corn, chopped cilantro, diced tomatoes, and the remaining chipotle ranch dressing. Mix well until all ingredients are evenly coated.

        Assemble the Burritos: Lay out a flour tortilla on a clean surface. Place a generous scoop of the rice and bean mixture in the center of the tortilla, followed by a handful of shredded lettuce and sliced grilled chicken. Top with shredded cheddar cheese.

          Wrap the Burrito: Fold the sides of the tortilla over the filling, then roll from the bottom up to enclose the filling completely. Repeat with the remaining tortillas and filling.

            Serve: If desired, grill the wrapped burritos on the grill or in a skillet for 2-3 minutes on each side to toast them slightly and melt the cheese. Cut in half and serve with lime wedges on the side.
