Easy Chipotle Ranch Grilled Chicken Burrito

2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 tablespoon chipotle ranch seasoning (store-bought or homemade)

1/2 cup plain Greek yogurt

2 tablespoons mayonnaise

1 tablespoon lime juice

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 cup cooked rice (white or brown)

1/2 cup black beans, rinsed and drained

1/2 cup corn (fresh, canned, or frozen)

1 medium tomato, diced

1/2 cup shredded cheddar cheese

1/4 cup fresh cilantro, chopped

4 large flour tortillas

Salt and pepper to taste

Instructions
 

Marinate the Chicken: In a bowl, combine the olive oil and chipotle ranch seasoning. Add the chicken breasts and coat them well. Allow to marinate for at least 30 minutes (or up to overnight in the fridge for more flavor).

    Cook the Chicken: Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and season with salt and pepper. Grill the chicken for about 6-7 minutes on each side until fully cooked and the internal temperature reaches 165°F (75°C). Let the chicken rest for 5 minutes, then slice or dice it.

      Prepare the Chipotle Ranch Sauce: In a small bowl, mix together the Greek yogurt, mayonnaise, lime juice, garlic powder, onion powder, and a pinch of salt and pepper. Adjust seasoning to taste.

        Assemble the Burritos: On each tortilla, layer cooked rice, black beans, corn, diced tomatoes, grilled chicken, shredded cheese, and fresh cilantro. Drizzle with the chipotle ranch sauce.

          Wrap the Burritos: Fold in the sides of the tortilla and roll tightly from the bottom up.

            Grill or Toast: Optionally, you can grill the assembled burritos on a pan for 2-3 minutes on each side to crisp them up.

              Serve: Cut each burrito in half and serve with extra chipotle ranch sauce and lime wedges on the side.
