1 can (15 oz) chickpeas, drained and rinsed

1 large cucumber, diced

1 cup cherry tomatoes, halved

1/2 red onion, finely chopped

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley or basil, chopped

3 tablespoons olive oil

2 tablespoons lemon juice

1 teaspoon garlic powder

Salt and pepper to taste

Instructions
 

In a large bowl, combine the drained chickpeas, diced cucumber, cherry tomatoes, and red onion.

    In a separate small bowl, whisk together the olive oil, lemon juice, garlic powder, salt, and pepper until well combined.

      Pour the dressing over the chickpea mixture and toss gently to combine.

        Add the crumbled feta cheese and chopped herbs, and fold them into the salad.

          Taste and adjust seasoning, adding more salt, pepper, or lemon juice if desired.

            Let the salad sit for at least 15 minutes before serving to allow the flavors to meld.

              Serve chilled or at room temperature. Enjoy!
