Made with your choice of pasta, ripe cherry tomatoes, creamy mozzarella, and fresh basil, it's tossed in a simple olive oil and balsamic dressing. Ingredients
  

8 oz (about 2 cups) pasta (fusilli, penne, or farfalle)

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini), drained

1/2 cup fresh basil leaves, torn

1/4 cup extra-virgin olive oil

2 tbsp balsamic vinegar

1 clove garlic, minced

Salt and pepper to taste

Optional: 1/4 cup grated Parmesan cheese

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and rinse under cold water to cool.

    Prepare the Dressing: In a small bowl, whisk together the 1/4 cup olive oil, balsamic vinegar, minced garlic, and a pinch of salt and pepper. Adjust to taste.

      Combine Salad Ingredients: In a large mixing bowl, combine the cooled pasta, cherry tomatoes, fresh mozzarella balls, and torn basil leaves.

        Toss with Dressing: Pour the dressing over the pasta salad and gently toss everything together until well combined. If using, sprinkle the Parmesan cheese over the top and toss lightly.
