Ingredients

2 large peaches, peeled and sliced

1 cup all-purpose flour

1/2 cup brown sugar, packed

1/2 cup granulated sugar

1/2 cup unsalted butter, softened

2 large eggs

1/2 cup sour cream

1 tsp vanilla extract

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1/2 tsp cinnamon (optional)

Powdered sugar for dusting (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) and greasing a 9-inch round cake pan.

Prepare Peaches: In a small bowl, coat the sliced peaches with a sprinkle of cinnamon and set aside.

Mix Wet Ingredients: In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add in the eggs one at a time, mixing well after each addition. Then stir in the sour cream and vanilla extract until combined.

Combine Dry Ingredients: In another bowl, whisk together the flour, baking powder, baking soda, and salt until they are well mixed.

Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix; a few lumps are perfectly fine.

Fold in Peaches: Gently fold half of the sliced peaches into the batter, reserving the other half for topping the cake.

Pour and Arrange: Pour the batter into the prepared cake pan. Decorate the top with the reserved peach slices, arranging them evenly over the batter.

Bake: Bake in the preheated oven for 35-40 minutes or until a toothpick inserted into the center comes out clean.

Cool: Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

Serve: Once cooled, dust with powdered sugar if desired, slice, and enjoy!
