Ingredients
  

2 large cucumbers, thinly sliced

1 cup carrots, julienned

1/2 cup red bell pepper, thinly sliced

1/4 cup red onion, thinly sliced

1/4 cup fresh cilantro, chopped

1/4 cup rice vinegar

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon honey or agave syrup

1 teaspoon fresh ginger, grated

1 clove garlic, minced

1 teaspoon sesame seeds

Salt and pepper to taste

Instructions
 

In a large mixing bowl, combine the cucumber slices, julienned carrots, red bell pepper, red onion, and chopped cilantro.

    In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey (or agave syrup), grated ginger, and minced garlic until well combined.

      Pour the dressing over the salad ingredients in the large bowl and toss gently to ensure everything is evenly coated.

        Taste the salad and add salt and pepper as needed.

          Let the salad sit for about 10-15 minutes at room temperature to allow the flavors to meld. You can also chill it in the refrigerator for a more refreshing taste.

            Before serving, sprinkle sesame seeds on top for added crunch and garnish.
