4 medium cucumbers, thinly sliced

1/4 cup rice vinegar

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon honey (or agave syrup for a vegan option)

1 teaspoon grated ginger

2 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 tablespoon sesame seeds

2 green onions, chopped

Fresh cilantro for garnish (optional)

Instructions
 

In a large mixing bowl, combine the rice vinegar, soy sauce, sesame oil, honey, grated ginger, minced garlic, and red pepper flakes. Whisk until well blended.
