2 large English cucumbers, thinly sliced

1/4 red onion, thinly sliced

1/2 cup rice vinegar

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon honey or agave syrup

1 teaspoon finely grated ginger

1 garlic clove, minced

1 teaspoon chili flakes (optional for spice)

2 tablespoons sesame seeds

2 green onions, chopped

Fresh cilantro or mint leaves for garnish

Prepare the Cucumbers: Place the thinly sliced cucumbers in a large mixing bowl. Sprinkle with a pinch of salt and let them sit for about 10 minutes to draw out excess moisture.
