Dump-and-Bake Chicken Tzatziki with Rice

Ingredients
  

1 lb boneless, skinless chicken breasts

1 cup basmati rice

1 ¾ cups chicken broth

1 cup Greek yogurt

1 medium cucumber, grated and drained

2 cloves garlic, minced

1 tbsp fresh dill, chopped (or 1 tsp dried dill)

Juice of 1 lemon

1 tsp olive oil

Salt and pepper, to taste

½ tsp paprika

Fresh parsley, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Chicken: Season the chicken breasts with salt, pepper, and paprika on both sides. Place them in the center of a large baking dish.

      Prepare the Rice: Scatter the basmati rice around the chicken.

        Mix the Broth: Pour the chicken broth over the rice and chicken, ensuring the rice is submerged.

          Make the Tzatziki: In a medium bowl, combine the Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, and olive oil. Stir well and season with salt and pepper to taste.

            Add Tzatziki Mixture: Spoon half of the tzatziki sauce over the chicken and rice mix, spreading it out evenly.

              Bake: Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 35-40 minutes or until the chicken is cooked through (internal temperature of 165°F/74°C) and the rice is tender.

                Finish and Serve: Remove the foil and drizzle the remaining tzatziki sauce over the baked chicken. Garnish with fresh parsley.
