Ingredients

For the Dough:

3 cups all-purpose flour

1/2 cup unsalted butter, cold and cubed

1 tsp salt

1 tsp turmeric powder (for color)

1/2 cup cold water

For the Beef Filling:

1 lb ground beef

1 tablespoon vegetable oil

1 onion, finely chopped

2 cloves garlic, minced

2 green onions, chopped

1 tablespoon fresh thyme or 1 tsp dried thyme

1 tsp allspice

1/2 tsp black pepper

1/4 cup beef broth or water

1 Scotch bonnet pepper, minced (adjust to taste)

Salt to taste

Instructions

Make the Dough:

    - In a large bowl, whisk together the flour, salt, and turmeric powder.

      - Add the cold, cubed butter and mix with your fingers or a pastry cutter until the mixture resembles coarse crumbs.

        - Gradually add cold water, a tablespoon at a time, mixing until a dough forms. Do not overwork the dough.

          - Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

            Prepare the Beef Filling:

              - In a skillet, heat vegetable oil over medium heat. Add onions and garlic, sautéing until soft and translucent.

                - Add ground beef to the skillet, breaking it apart with a spoon. Cook until browned.

                  - Stir in green onions, thyme, allspice, black pepper, and minced Scotch bonnet pepper. Cook for another minute.

                    - Pour in the beef broth or water, and cook for an additional 2-3 minutes until the mixture thickens. Season with salt to taste. Let cool.

                      Assemble the Patties:

                        - Preheat the oven to 375°F (190°C).

                          - Remove the dough from the refrigerator and divide into equal portions (about 8).

                            - On a floured surface, roll each portion into a circle about 1/8 inch thick.

                              - Place a generous spoonful of the beef filling in the center of each circle. Fold the dough over to create a half-moon shape, and pinch the edges together to seal. Use a fork to crimp the edges for extra security.

                                Bake the Patties:

                                  - Place the sealed patties on a baking sheet lined with parchment paper. Brush the tops lightly with beaten egg or milk for a golden finish.

                                    - Bake in the preheated oven for 25-30 minutes or until golden brown.

                                      Serve:

                                        - Allow to cool slightly before serving. Enjoy your Jamaican beef patties hot, either on their own or with a side of spicy dipping sauce!
