Ingredients
  

2 large cucumbers, thinly sliced

1 large apple (preferably a tart variety like Granny Smith), cored and diced

1/4 cup red onion, finely chopped

1/2 cup walnuts, chopped and toasted

1/4 cup feta cheese, crumbled (optional)

1/4 cup fresh mint leaves, chopped

3 tablespoons olive oil

2 tablespoons apple cider vinegar

1 tablespoon honey

Salt and pepper to taste

Instructions
 

In a large mixing bowl, combine the sliced cucumbers, diced apple, and chopped red onion. Toss gently to mix.

    In a separate small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper until well combined.

      Pour the dressing over the cucumber and apple mixture, and toss gently until everything is well coated.
