2 lbs sirloin steak, cut into 1-inch cubes

6 medium-sized potatoes, peeled and cut into thick slices

1 medium onion, chopped

4 cloves garlic, minced

1 cup beef broth

1 cup heavy cream

1/2 cup sour cream

1 cup shredded sharp cheddar cheese

1/2 cup crumbled bacon (cooked)

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh chives or green onions, chopped (for garnish)

Prepare the Steak: Season the cubed sirloin steak with salt, pepper, and smoked paprika. Set aside.

    Layer the Ingredients: In the bottom of the crockpot, layer half of the potato slices, followed by half of the chopped onion, and half of the minced garlic. Add the seasoned steak cubes on top, then layer the remaining potatoes, onions, and garlic.

      Add Liquids: Pour the beef broth over the layered ingredients, followed by the heavy cream. Make sure the liquids are well-distributed throughout the crockpot.

        Cook in the Crockpot: Cover and cook on low for 6-8 hours, or on high for 4-5 hours. The potatoes should be tender, and the steak should be cooked through.
