The star of our dish is, of course, the chicken. Boneless and skinless chicken breasts are preferred for this recipe as they provide a lean source of protein that cooks evenly and quickly. Their shape makes them perfect for breading and frying, allowing for a crispy exterior while keeping the inside tender and juicy. Avoiding skin also helps in keeping the dish somewhat lighter without sacrificing flavor, especially when complemented by the rich hot honey and feta.

Ingredients

4 boneless, skinless chicken breasts

1 cup all-purpose flour

2 large eggs

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and black pepper to taste

1 cup crumbled feta cheese

1/4 cup hot honey (store-bought or homemade)

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Instructions

Prep the Chicken: Start by patting the chicken breasts dry with paper towels. This will help them crisp up nicely during cooking.

Set Up Breading Station: In three separate bowls, place the flour seasoned with salt, garlic powder, onion powder, and paprika in one bowl. In the second bowl, whisk the eggs until smooth. In the third bowl, place the panko breadcrumbs.

Bread the Chicken: Dip each chicken breast first into the seasoned flour, shaking off excess flour. Next, dip it into the egg mixture, allowing any excess to drip off. Finally, roll it in the panko breadcrumbs, pressing gently to adhere the crumbs well.

Cook the Chicken: Heat the olive oil in a large skillet over medium-high heat. Once the oil is hot, add the breaded chicken breasts. Cook for about 5-7 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F/75°C). Remove the chicken and place on a plate lined with paper towels to drain any excess oil.

Prepare the Hot Honey & Feta: In a small bowl, combine the hot honey and crumbled feta cheese, mixing until the feta is coated in the honey.

Assemble the Dish: Place the crispy chicken breasts on a serving platter. Drizzle the hot honey feta mixture over each piece of chicken, ensuring an even distribution.

Garnish and Serve: Sprinkle with fresh chopped parsley for a pop of color and added flavor. Serve immediately, enjoying the sweet, spicy, and savory combination!
